Kitchen hoods are among the most fire-prone areas in any facility.
In shopping malls, hotels, hospitals, schools, restaurants, and industrial kitchens, hoods are used to remove grease-laden vapors and heat generated during cooking.
However, grease accumulation in filters and ducts over time creates a highly flammable layer, significantly increasing the risk of fire.

When these deposits ignite, duct fires and rapid flame spread can occur.
The presence of gas lines, electrical devices, and ventilation systems further heightens the danger.
Therefore, a reliable kitchen hood fire suppression system is critical to detect the fire early and instantly shut off the gas supply to the cooking appliances.


Legal Requirements and Standards

Under Turkish fire safety regulations, automatic kitchen hood fire suppression systems are mandatory for:

  • Commercial kitchens in shopping malls

  • Kitchens in high-rise buildings

  • Catering facilities serving more than 100 people

Each system must include:

  • Gas detection sensors

  • Automatic gas shut-off valves

  • Fire detection nozzles

  • Alarm and warning units

For cases not specifically covered by national regulations, system design follows international standards such as:

  • NFPA 17A – Wet Chemical Extinguishing Systems

  • NFPA 96 – Ventilation Control and Fire Protection of Commercial Cooking Operations


How the System Works

When heat or flame is detected, temperature-sensitive detectors or linear heat cables activate the system.
Once triggered:

  1. The wet chemical agent (potassium acetate-based) is discharged through nozzles directly onto the cooking surface.

  2. The chemical reacts with the hot grease, creating a soapy film (saponification) that smothers the fire and prevents re-ignition.

  3. Simultaneously, the gas supply is shut off and audible/visual alarms are activated.

This rapid process ensures fire control within seconds and minimal equipment damage.
